Throw an Ethiopian coffee morning, an Indian chai tea party or simply a good old fashioned English afternoon tea party; whatever your preference you can take pride in knowing all the fun you’ll have and money raised on the day will be helping to make a tired, overworked animal’s life a little brighter. Now, cupcakes are often baked at home for special gatherings or just when I feel a sweet craving coming on! This is my absolute favourite recipe for Super Easy Vanilla Cupcakes. They’d be ideal for your SPANA World Tea Party, they’re so easy to make and let’s be honest, no tea party is complete without a cake or two!
Bake; 12-14 Minutes
Cool; 25 Minutes
Makes; 16 large cupcakes
175g Unsalted Butter at room temp
175g Caster sugar
1 1/2 Tsp vanilla extract
3 Large eggs (weigh – should be 175g)
175g Self-raising flour – Sifted
1.Preheat fan oven to 170 ºC
2.Line a standard muffin tin with cupcake cases.
3.Put the butter, sugar, vanilla essence, eggs and flour into a large bowl or mixer.
4.Mix for 2 minutes. Stop mixing and using a spatula scrape all the mixture from the base and sides.
5.Continue to mix for a further 2-3 minutes until the mixture is smooth and airy.
6.Using a spoon carefully add the mixture to the cupcake cases, filling to approx 1/3 of the way up the case.
7.Bake for 12-14 minutes.
9.Remove from oven. The cupcakes should have a slightly golden colour to the tops. Press the tops, they should feel springy. Allow to cool in the baking tray for a couple of minutes then transfer to a cooling rack to cool completely before decorating.
Stork and other baking margarine’s are great for making cakes as they’re the perfect consistency to bake with straight from the fridge! Always handy to have some in the fridge, especially if, like me, you often forget to get the butter out of the fridge a few hours prior to baking!!
Weigh the eggs, ideally they should be same weight as the flour, sugar and butter. If the eggs weigh slightly less simply add a little milk until desired weight is reached. If they weigh too much, remove a little egg white from the mix.
What do SPANA Do?
The worlds poorest communities across the world depend on horses, mules, donkeys, camels and oxen for their livelihoods. These amazing animals do the jobs of trucks, tractors and taxis and are worked so hard day after day in some of the most extreme conditions. Soaring temperatures, little food, inadequate water and poor harnessing mean many of these animals endure a harsh life with many receiving limited or no veterinary care when they become sick or injured. SPANA want to change the mind set of communities in poor areas to ensure these wonderful animals receive the best possible care, respect and attention throughout their life.
Training – They strive to build expertise among vets and animal owners in these deprived areas. SPANA train animal owners about better welfare standards which can result in enhanced performance and productivity.
Treatment – SPANA provide free veterinary care via a network of free animal hospitals in towns and cities across the world. A large number of mobile clinics provide vital care to animals in remote and isolated rural communities.
Teaching – Volunteers at SPANA share their knowledge about respect, kindness and compassion to the next generation. SPANA teach children to develop a positive, nurturing attitude towards animals to build a better future.
SPANA rely entirely on the kindness of those who share their vision of a world where working animals receive the care they deserve.
To help SPANA raise funds for their very worthy cause why not get involved this summer and host a SPANA tea party with friends. Any excuse to hang out with friends whilst enjoying a delicious tea, coffee and cake sounds pretty great to me, you could even add a little fizz to make the event extra special too! Better still everything raised will be helping the hardworking animals around the world have a better life too.
SPANA have created a special free pack which is available to download at spana.org. for everyone taking part. The pack is full of party tips and recipes to ensure your tea party is a success. Don’t forget to try our Super Easy Vanilla Cupcake Recipe too, we’re confident your friends will love them!
Remember, this is one fun way you can say thank you to all the animals who work hard to harvest the coffee beans and tea leaves we drink daily. Let’s get together and help to give these hardworking animals the care and nurturing they deserve and support those communities less fortunate than ourselves.
Have fun drinking tea and eating cake everyone! x
