Simple Summer Recipes

As much as you may love your brand new kitchen, who wants to be chained to the stove in the hot summer months? We don’t.

But you can still enjoy some delicious summer dinners with these quick and easy recipes that don’t compromise on taste.

Chorizo and Egg Salad

For a simple supper with a Spanish twist try this easy salad, which you can have on the table in 30 minutes.

Cook some baby new potatoes in salted, boiling water for 12 minutes. Add in some eggs for the last 6 minutes, allowing one per person, and fresh French beans for the final 2 minutes. Drain the pan and run the eggs under cold water until they’ve cooled.

Fry slices of chorizo for a couple of minutes until they begin to crisp, then remove and set aside. Next, add thinly sliced garlic to your pan and fry gently for 1 minute. Remove from the heat and add a splash of sherry vinegar and some freshly chopped parsley.

Toss the chorizo, potatoes and beans with your mixture from the pan, then shell your eggs, cut them in half and lay them on the salad. Ole!

Zesty Summer Pasta

Fry some garlic and chilli in a pan, stirring in some lemon zest when you remove it from the heat.

Next, cook your pasta in lightly salted water, adding some fresh garden peas for the last couple of minutes. Drain your pan, then toss the pasta and peas with your garlic, chilli and lemon mix, throw in some chopped, fresh basil, a splash of olive oil, and season to your taste.

These simple summer recipes are bursting with flavour, yet they’re quick and simple to make. Enjoy them in the back garden with a jug of Pimms or a glass of white wine. Here’s to the summer – cheers!
