No Bake, Dairy Free Chocolate Strawberry Cheesecake.

If you love chocolate and you love cheesecake then you most definitely need to have a go at making our No Bake Chocolate Strawberry Cheesecake, the perfect treat for Valentine’s. It’s a delightful dessert and it couldn’t be any easier to make! There’s no need to even heat up the oven for this recipe, simply freeze it for an hour then keep it refrigerated and slice up when you’re ready to serve.

No Bake Chocolate Strawberry Cheesecake.

Serves: 6-8

Prep time; 15 minutes

Chilling Time; 90 mins – 2 hours.

  •  180g digestive biscuits/hobnobs.
  • 75g butter
  • 80g caster sugar
  • 120ml whipping cream
  • 100g dark chocolate, melted and cooled
  • 50g milk chocolate, melted and cooled
  • 2 tablespoons cocoa powder – sifted
  • 200g full fat cream cheese OR 100g Full fat Cream Cheese & 100g Mascarpone
  • 200g strawberries – for decoration
  • 7g freeze dried strawberry pieces – optional.

Diary Free Alternative Ingredients;

  • 180g digestive biscuits/hobnobs
  • 65g dairy free butter or coconut oil
  • 80g caster sugar
  • 120ml Soyatoo vegan whippable cream topping (Available at Real Foods)
  • 100g freefrom dark choc bar (Available from Sainsbury’s)
  • 50g freefrom milk choc bar (Available from Sainsbury’s)
  • 2 Tbsp choc chick organic raw cacao powder 100g (Available from Holland & Barratt)
  • 200g creamy Sheese Original Spread (Available from Holland & Barratt)
  • 200g strawberries – for decoration
  • 5g freeze dried strawberry pieces – optional.

Method;

  1. Melt the butter/coconut oil over a low heat. Whilst it is melting crush the digestive biscuits.
  2. Mix the melted butter/coconut oil and digestive biscuits together.
  3. Press into an 18cm cake tin or individual spring form tins or silicon moulds and refrigerate.
  4. Melt the chocolate over a ban marie or heat on low in a microwave.
  5. Beat the cream cheese, mascarpone (if using), caster sugar and freeze dried strawberry pieces together.
  6. Using a hand held mixer gently whip the cream until soft peaks form.
  7. Add the melted chocolate (make sure its not too hot) & sift the cocoa powder into the cream.
  8. Gently fold the creamy chocolate mixture and cream cheese/mascarpone together until combined.
  9. Spoon over the crushed biscuit base and gently spread until smooth.
  10. Pop in the freezer for one hour.
  11. Refrigerate for about 30 minutes (or until ready to serve)
  12. Before serving decorate with fresh strawberries and serve immediately.
